Baked sweet potatoes with orange

Do you enjoy sweet potato (yams)? No matter how you cook them they’re delicious, I know, but see what you think of my Greek recipe that makes them taste even sweeter! How, I hear you say? Well, it’s because they swim in orange juice during baking. And if you’ve heard of yams with orange before, you’ll be pleased to hear my version is kinder to your health as I don’t use sugar. As for the orange zest I like to sprinkle on top I have to say – oops – I can see you’re salivating already. Wait till you try them!

Ingredients

3 large sweet potatoes

Juice of 2 medium oranges

Orange zest from 1-2 oranges

1/2 teaspoon cayenne or paprika

A sprinkle of ginger

Salt, pepper, olive oil

Optional: juice of 1/2 medium lemon

Optional: zest from an unwaxed lemon

 

Preparation

Take the zest from the oranges, then cut them up to juice them.

Do the same with the unwaxed lemon if using (only 1/2 lemon for the juice).

Peel the sweet potatoes and wash them.

Cut them lengthways down the middle, then chop in thick slices. Put them in a large baking dish.

Sprinkle salt, pepper, cayenne and ginger on them, mix them well with your hands.

Sprinkle the zest of the orange (and the lemon, if using) over the potatoes.

Pour the juice down the side of the dish (not over the potatoes). Make sure it’s distributed evenly in the dish.

Sprinkle a little olive oil over the potatoes.

Cover with aluminum foil and bake in a preheated oven at 190 degrees C in a middle shelf for 30 minutes.

Take out of the oven, remove the foil. Turn over the potatoes quickly using 2 forks.

Put back in the oven uncovered this time, bake for another 30 minutes, and turn up heat at 195 degrees.

Enjoy with fish or meat dishes, such as a bifteki, and a salad.
